What is the Phase 1 Lifestyle?
So what in the world is all this talk about the Phase 1 Lifestyle?
Doug Kaufmann is the brains behind the Phase 1 Lifestyle, “The Phase 1 diet is designed to starve an organism – fungus. Parasitic yeasts and fungi can infect human tissue, causing miserable symptoms. Once on board, these organisms must have their favorite food source, sugar, to survive. The Phase 1 Diet seeks to starve and rid the body of those parasitic organisms, while eliminating foods that are commonly contaminated with fungal poisons known as mycotoxins.”

Hi Kristin, I found a vinegar free, sugar free hot sauce. The only thing is it contains xanthan gum. Would this be considered phase one or should I avoid it? If not do you have a brand of hot sauce you could recommend?

I’ve been on the Phase 1 diet since April, 2014 and I’m finding ways to cook veggies that I just ‘kind of’ liked before but now just love ‘em.
I have ‘cheated’ here & there but never get far from my Phase 1 diet plus I’m feeling better & have more energy than I’ve had for several years.
So I’ll just stay on the Phase 1 & Phase 2 (sometimes).
I’m 63 and yes this is a new way of cooking. Sometimes I feel like a ‘pioneer’ woman because there is so much more I want to do – like canning, fermenting, etc. So far I’ve canned Apple Pie Jam using Pomona Pectin & xylitol and I’ve made Strawberry Freezer Jam (no pectin) with Xylitol.
Is Ezekiel Bread allowed on the phase 1 diet ?
Hey Kristin, I was wondering if Goat’s milk yogurt was ok and vegan butter… we have dairy sensitivities…also we use rice milk but am I right to assume that is out? can we use Almond or coconut and do I need to buy unsweetened I guess? How do I keep up my weight on the phase 1 diet. I am already quite thin and can not afford to lose anymore weight.
I was wondering your opinion of being on the phase 1 while pregnant. I went on it for 2 weeks a while back and It was amazing, I stopped having knee pain and found the cause of my migraines. Since then I haven’t had the opportunity to go on it again because of going off to college then after I married pregnant and breastfeeding. It’s been a while since I’ve seen the show but I know he doesn’t recommend pregnant or breastfeeding women to be on it, but I can’t remember why? Any help would be greatly appreciated. I’d like to go on a modified version if anything.
I have an allergy to Stevia (which is a plant related to ragweed=which I have) & xylitol upsets my stomach. Is there any other natural sweeteners available?
Also, are coconut water and coconut milk ok to have during phase one?

I recently began phase 1 of the Kaufmann diet. I was wondering if psyllium husk powder is ok to have on the diet. I have been looking for a good fiber source. Would chia seeds be a better opinion?

Hello I started the phase 1 diet along with my husband and three kiddos, and by the way I am feeling GREAT!!!I am amazed actually cause I am mexican and I used to eat tons of corn tortillas and chips, and I though I could not survive without them, on the flip side I was always tired, suffered from sinus infections, different kinds of aches in my body, menstrual dissorders, and so far they are gone. We have over 1 month doing the phase 1 diet, and just I have a few questions, I read that in phase 2 you can eat flour tortillas in moderation, and is other fruit permited in the future? or sprouted grains? thank you.

Love when you and Kyle are on the show! Whenever I went up into the North East from Florida, where I live, my nose and sinuses would fill up. I heard Doug say that all sinusitis was fungus related so in November 2013 I started being very strict about the phase I diet. Exactly as described, craving for cakes and cookies went away after three weeks as did any sinus problems. However I also started loosing amazing amounts of weight without even trying. Cakes and cookies are now abhorrent. I do not miss them at all. I have lost 70 lbs since November (6 months) and I like this so much I have continued with it. As far as meat is concerned, I do not think pork is ok and all other meat I make sure is grass fed and not grain fed with no steriods or antibiotics. I like this so much I am viewing it as a permanent change. I get all my carbohydrates from vegetables and have a great amount of energy. Thank you for all your great ideas and recipes.

Hi Karen, I love Ume Plum Vinegar! It has a low acidity level, so I consider it Phase 1 friendly since it does not disrupt the friendly bacteria in our gut like other vinegars.
My husband and I just started the Candida diet two days ago that our Chiropractor/Kinesiologist put us on but was SO VAGUE.. a sheet with a list of allowed and not allowed foods and a bunch of supplements and we were left in the dark! ugh… SO GLAD I found this site. I used to watch Doug Kaufman years ago and then we lost the station on cable. Wished I had thought of his site but as always, everything happens for a reason, and here I am.. I was googling Candida breakfast recipes! We are SO HUNGRY since we had no direction! He’s a Fast food junkie and addicted to sugar in every way so this is proving to be quite challenging for us both… we both are loaded with yeast. If ANYONE on this blog could assist me with recipes, especially breakfast ones, I would be forever grateful!! I’ve checked so many candida sites and NONE of them say the same things about what you can and cannot eat.. very confusing… I will adopt Doug and Kristin’s method and hopefully this will prove beneficial..
I discovered “Know the Cause” and the phase 1 diet via your blog. Thank you! I am in the process of implementing the diet for my family. We are using a gradual approach, because with 4 kids (ages 1 to 9), it is hard to change everything at once! Fortunately, we were already used to eating a dairy-free and almost wheat-free diet, and we mostly used unrefined natural sugars.
I have a question : I often find products that list sugar in the ingredients list, but have 0 grams of sugars and carbohydrates in the nutritional information table (ex. nitrite-free ham or turkey slices). Should these products be completely avoided during phase 1, or could we assume that they contain so little sugar that it would be OK to use them occasionally?
Hi Julie, so excited for you and your family! I think taking the gradual approach is by far the most effective. Yes, I used turkey bacon that had 0 grams of sugar, but had some listed in the ingredient list with great success. I don’t get too legalistic with Phase 1 because that’s a set up for failure. Sounds like your taking the perfect approach. Keep us posted on your success!
I am feeling somewhat overwhelmed with both my husbands and my health issues all of a sudden. He is being evaluated for spinal stenosis. Do you have any knowledge of that condition and is it possible that it is fungus? He has glaucoma, scrotum rash, enlarge prostate and testicular cysts.

I was once once on a Phase One type phase on phase off diet. Can’t seem to determine; stay on long enough to get benefits. Sedentary lifestyle my most important downer. Had tried a sort of Dolly Parton Diet with prayer & fasting which was great, but couldn’t maintain. Husband didn’t appreciate the soup everyday, which I could have changed out after two/three weeks. Can’t remember now. After ten months felt wonderful same for diets doctor had me on also. The doctors had me take pills and sit in office hours at a time once a month. I actually was making (and eating) a pot of red lentil soup with leeks,carrots and celery, because I thought I saw somewhere that lentils were allowed…Oh dear…well I put a large bone in the broth so I will have the tasty broth.Is there a more extensive list somewhere of foods and herbs and spices that are allowed on the Phase 1? thanks so much, Blessings, Marjorie

I love lentils! They would be considered more of a Phase 2 food because they are a in the legume family, related to the bean. A wonderful option for a real food diet! Great question, thanks Marjorie!

I have a question for you and would appreciate your input. I have become quite sensitive to eggs…sadly, and have learned instead, to love a fruit (berries) smootie in the morning. I’ve been using an egg white protein powder, which honestly doesn’t agree with me either and which, of course, makes sense!…I get spacey…foggy brain, dull headache, etc.. So, with a little research, I discovered a plant based protein powder at our health food store called “Vega”…Do you know anything about it at all? It does not contain dairy, gluten or soy and sounds as though it really might work, however, it has quite a list of ingredients I’m not sure about. If you have a moment in your busy schedule and can look into this, I’d appreciate your input…so, too, I’m sure, would many others with like sensitivities.

Is chocolate and/or carob on the phase one diet? I am speaking of the suagarless of course.
Cocoa/cacao is not officially phase 1, but I used it while on a strict phase 1 diet with amazing results. It is a superfood with the highest antioxidant ratings (ORAC) of any food on the planet. Antioxidants are antifungal. It’s always good to get a quality brand and raw is always better. No food is right for everyone, so pay attention to how it makes you feel.

Allowed fruits are: Green apples, berries, grapefruit, lemons, limes, & coconut. Allowed vegetables are: Vegetables & freshly made vegetable juices. So… are freshly made juices from the listed fruits allowed or it that too much of a concentrated form of natural sugars? I see that a homemade lemon aid/lime aid is allowed, just wondering! If not I’m happy w/ the lemon/lime aids because previous diet didn’t even allow stevia!
Yes, those are all great things to juice! And I LOVE juicing!! I concentrate on the veggies and sweeten it with the a little fruit, apples are my favorite…. a few drops of stevia would work great too.

Here’s a question! I was wondering why the Kiwi fruit is not part of the Phase 1 Diet? It doesn’t seem to be like the other fruits that have a high sugar content…. In fact, I’ve just learned that an apple has about 14 grams of sugar, whereas the humble little kiwi has only 7! Perhaps this is not the only reason it isn’t mentioned for Phase 1, and I’d be ever so grateful if you could give me some idea as to how all this has been determined.

The food industry has vastly changed since Doug created the Phase 1 diet. These days we have many more options from all around the world right down the street at our local market. The options are numerous and exciting!
Doug likes to stick to his basic Phase 1 diet that God gave him many years ago… and thousands have gotten well because of this. I unofficially add my own twist because of new science and new options, while sticking to the foundational truth that Doug teaches us.
As far as kiwis go, I love them! They are a great real food option for a healthy diet. Depending on your health issues and reasons for doing Phase 1, it’s a good idea to keep fruits to a minimum initially.
Can I have one cup of organic coffee with a little organic half and half once a day on Phase 1?
Hi Deb! It’s important to not be addicted to anything, so I don’t recommend coffee daily. For some people coffee has health benefits and for others it is detrimental, so pay attention to how it makes you feel. It’s always a good idea to take it out of your diet for a few months and let the body rebalance it’s natural energy level.
With that being said, most coffee is high in mycotoxins. Coffee is not really a bean, its a seed from a berry, so as long as you’re not addicted and you don’t have to have it to get you going in the morning it is fine. Started Phase 1Diet,2 weeks ago, but was mistakenly using soymilk, too many almond/flour cookies, and corn chips. Still feeling really fatigued and lousy, though had a couple good days. I Started Jordan Rueben’s Fungal Defense supplements (for 10 day program)just 4 days ago.
So 2 weeks diet,(with a few mistakes) 4 days on the cleanse, feelin pretty lousy today.**** When should the die off yucky feeling begin to ease off?****THanks so much.
We need a list of products and the brands on everything you use PLEASE!!! And where to buy the products. Where can you get grass fed only beef, chicken,eggs etc??? I just learned the xylitol I’m using is made from corn, I didn’t read the label I bought it at health food store, it states 100% pure non GMO on front of label it is the Now brand?? Besides the typical Health Food Store, Publix grocery store is pretty good for finding these items. Believe it or not, Cosco’s sells ORGANIC beef and ORGANIC chicken! Hope that helps

I would love to have a good recipe for tortillas. One of my favorite types of food is the Tex-Mex. I miss flour tortillas.
Hi Glenda. Yum! Quinoa tortillas..sounds great. How?
Quinoa Tortillas:
3 cups Quinoa Flour
1 tsp salt
1 tsp smoked paprika (or any favorite seasoning)
3 Tbsp cold butter
1 cup ice cold water (fridge water is fine)
Parchment or wax paper
-Spread flour out on 2-3 cookie trays to 1/4 inch deep. Bake @215 degrees for 2 hours. (This will take away that bitter flavor that’s sometimes present with quinoa.) Cool to room temp.
-Mix dry ingredients.
-Cut cold butter into cubes and fork/mix into dry ingredients.
-Add water and knead dough.
-Form into a dense ball and put in fridge for 30 min (or longer is fine too).
-Cut ball into 8 pieces (It will not act like bread dough and will even crumble a little as its split up)
-Roll out one piece of dough btwn 2 pieces of paper (or one paper folded in half- my preference). Try not to roll it too thin or it won’t separate from the paper very easily. As the paper gets wetter, it gets harder to roll out. I stubbornly keep using the same paper, but it’d be so much easier to use a new one when rolling gets hard. ALSO- I imagine a tortilla press would make this whole venture way easier!
NOTE: I either bake a tortilla in a toaster oven or in a non-stick pan (Costco brand needs no oil).
TOASTER OVEN- Bake on parchment paper on rack (middle) @350 degrees for 12-15 min. It will have “bubbles” and brown a little. If it starts to blacken, take it out.
PAN- Med/Low preheated pan. Start tortilla for first couple min with top on pan then keep flipping till it looks done to your satisfaction. Just like tortillas, they become chips if you cook them too long.
Filling suggestions: Wet ingredients cause these tortillas to break apart. I put fresh veggies and meat in them then dip each bite into a sauce/salsa/dip/whatever I’m in the mood for.
I love to experiment with food! This same dough will make “pitas”, pastie/ pastelillo dough, and more depending on the thickness you bake it at.

Doug took us through a walk in the forest and it was desturbing about Mushrooms.
Yet, Frank uses them in his Beta Glucan products, there in Mark Sissons recipe books.
There is talk that mydisanial mushrooms are good.

Just like there are good and bad bacteria, I believe there are good and bad mushrooms. I believe medicinal mushrooms are a superfood!

I’m curious! I noticed that while on the Phase 1 diet, the only kind of teas allowed are herbal. As an Englishwoman, gotta’ tell you honey, I love my tea! Just a cup or two in the morning is all I generally partake of. If I get a good quality black tea and use only cream and stevia, would it be permissible? I generally get Trade Joe’s or a good organic black tea from our health food store. Perhaps I need to be apprised of the thinking behind aleviating regular tea from the diet.

Hi Kristin, Just watched you on Know The Cause segment on motivation It was a great show for me. I got Dougs recipie books in dece. I decided to try the diet because I went to the dr. in Jan for the normal phisical and ended up with antibiotics for troat and ear problems. I always thought I was pretty healthy. I worked 22 years as a courier for federal express. I was always on the go but eating habits were terrable. After 2 weeks on medicine we went to watch a friends boy rodeo on sat on sun I had a bit of a sore troat again and I got mad that was not like me. I was not a person to be sick often. I have been on the diet about 2 1/2 months I love the fact that I have lost 15 pounds. after the first 2 weeks I did feel beter but I do not feel so good these days. I seem tired and do not feel like doing much. I was wondering if you had any suggestions for me. I follow the diet really good except for the salad dressings I use on my salads. I do use store bought. But that is all. I donot use yeast at all no white anything. I use usana vitamins ,probiotics,prevagen.nsc24 all from the show. I do drink a lot of water and hot tea (stash and Celestial brands) What else can I put in my diet? I am trying so hard to get healthy! I have not put exersize in yet going to. Anything you could suggest would be greatly appreciated. Thks so much for your time and effort and the show!
Hi Rose Marie, it’s seems like you are doing a great job, congratulations! It’s hard for me to tell exactly what might be going on without doing a full consultation…. and I’m not a doctor, so it’s all just my opinion anyway (you know how that goes). Adding in exercise is a great idea, though! For me it really helps keep my energy up with a better sense of well-being. I’m a little confused you have millet as a grain, but Doug Kaufmann did a dining with Denni segment where he said millet is a seed and Phase 1 friendlly.
Yes, millet is a seed from a cereal grain… gluten-free, but still a grain. I double checked with Doug on that segment that you saw and it was a mistake, millet is Phase 2. Buckwheat, quinoa and amaranth are not in the cereal grain family, but a completely different botanical class… that is why they are Phase 1. Thanks Doug!

How long does this Phase 1 last?
Hi Lily, great question! Phase 1 really is a lifestyle, but I do recommend people commit to it exclusively for a period of time as a gentle detox and to see if it helps their health concerns. It will be different for everyone. Someone who is dealing with cancer would want to consider sticking to Phase 1 exclusively for a longer period of time than someone who just wants more energy. For me I always think about the fact that I didn’t get sick overnight and it will take more than 30 days to re-balance the body… 4-6 months is an average time, for some shorter and for others much longer. But I always tell people to give it a try for 2-4 weeks and see how they feel. Usually a person will feel worse before they feel better. This is how a person knows they are on the right track. The core of my diet is Phase 1 foods. I focus on whole, unprocessed foods and add in seasonal foods once I reached my health goals. Phase 1 is not a 30 day “diet” you do to lose weight and then go back to eating the “SAD” diet. It is a lifestyle that consists of whole, unprocessed “real food”. Hope this helps!

I have fought weight most of my life, have also suffered from chemical hypersensitivities for many years, but thank the Lord, my immune system is so much improved now. However, I have just recently started to battle with my weight again having gained over 10 lbs this past year. Would it be at all possible for you to include a one week menu within your website?
