My Story
I am just an average girl who has dealt with weight and food issues since a child. These issues followed me into adolescence and adulthood. I was a pretty healthy person, so I thought. I dealt with ear aches as a child, and had the occasional sinus infection or flu each season, but as I grew older the sinus infections grew worse, my allergies were year around, I was always tired, was diagnosed with depression- but had nothing to be depressed about – eczema, my weight was impossible to maintain and it was an ongoing battle. I also had menstrual issues that were severe and painful.
I was put on Prozac for my depression, a multitude of prescription and over the counter medication for my allergies, birth-control pills for my menstrual issues (at age 15!), antibiotics for my sinus infections… and the list goes on and on. I didn’t think much about it at the time. It seemed normal and the doctors didn’t seem to bat an eye.
I was always interested in health, probably because I was constantly trying to lose weight and I was involved in a lot of sports. I tried every diet theory out there, various diet pills and even got to an all time low and tried HCG injections at one point! I tried all sorts of fasts, cleanses and detoxes. Most things helped for a time period, but nothing seemed to last. I was on a constant roller coaster.
When I was in my early 20’s I had put on a ton of weight (60-70 lbs, I stopped weighing when I was almost 200 lbs) my eating was obviously out of control, my skin started to break out like I was a teenager, (I never even had a pimple in high school), I was tired all the time and I was dealing with all the above issues. I was so young, how could I look and feel so miserable? I went to every doctor imaginable. Surely, there was something wrong with me! The doctors did test after test and found nothing abnormal. They told me I was perfectly healthy, but I knew better.
You’re so interesting! I do not think I have read anything like that before. So wonderful to discover somebody with some unique thoughts on this issue. Really.. many thanks for starting this up. This website is something that is needed on the web, someone with some originality!
Could this program work if I follow a vegan diet?
Thank you for your story and commitment to helping us transition into Phase One. It is now my primary way to approach eating. I stumble sometimes, but not because of cravings.. I am fine without the sugary, carb laden foods. Every now and then I may pick up a KIND bar…without the peanuts…but that is it. My pantry has most of the staples I need, especially almond flour. But I was still struggling with putting together a decent, quick lunch. I was using a gluten free bread from Costco, but it has cane sugar. I found a paleo wrap at Whole Foods…expensive. It also felt like eating one of those fruit roll ups, and for $9 I thought it was over priced and tough. Then I remembered your flatbread recipe looked so good on KTC. I picked up the one staple I did not have, tapioca flour, and whipped up the flatbread. I was skeptical. I thought it would be horrible gooey, or just plain tasteless. Oh my goodness! In 8 minutes, I had REAL bread. Real. I spread some strawberry jam on a slice (made with xylitol), and I could have eaten the whole batch in one sitting. Now I can make sandwiches for lunch again. So long Costco bread. It is so satisfying to be able to see what goes into my food, and even more satisfying knowing who did it: me. Blessings to you Kristin and your family. Okay, I have to say it again. The flatbread is unbelievable.
I want to share my experience with others who are trying to get pregnant. I tried for 5+ years to conceive and was unable to even after doing different diets and detoxes. Finally, I found out about the Kaufmann diet and after being on it for 30 days, I was able to conceive! Good luck to those trying to conceive!
Kristin, what an inspiration you are… I’m on day number 8 of Phase 1 Lifestyle, and it’s been ok, but now my husband is coming home and I’m really concerned that I can still hang on… I do know GOD is the only answer, and I give HIM all the glory for my 7 prior days… So I guess the statement above is not true, I may be concerned, but I can rest in the fact that GOD has a plan, and if I hang on to HIS nail-scarred hand, I can do all things through HIM…

I’m so glad to hear you say N o matter what, God’s in it. I’ve been sick for twenty years with Lymes Disease. But I read your comments on fungus and believe that could be in it, too. We are just beginning to cook gluten free. I lost the spot on line where the nails were shown before snd after and so I lost the stuff anout series one diet. I followed that to try to print or buy ut but lost it, if you can redirect me ai’ll appreciate it.

First I want to say you define Fabulous, without knowing I feel such great energy. I can relate to your, story not necessarily the same Journey; but not so different from where we both started to where we are.
I was an overweight child, at 10 I put my self on a diet! Why….because my friends and I were going to wear necklaces to school one day and the one I wanted to wear that looked so pretty on my gorgeous mother; I mean stunning mother was so tight around my neck that my older brother who was a string bean said “Dana your turning blue, you can wear but you may die wearing it”.! I was not happy in fact I was very MAD!!!
It was a Tuesday April 7 30 years ago, (wow) My dad was out of town on business and I stormed into my mothers room and said tomorrow I am going on a diet. She said ok, not thinking much about it. And trust me my parents never made weight an issue, but it was the looming cloud…. They hid the junk from my middle brother and myself ( really me) he was a little chunkie but adorable and I was chunkie in PLUMP way! Not so cute. The next day I went to school not wearing the gold heart, I remember telling my friend at the time Wendy that the necklace was tight but by next year it will fit, she looked at me like I was crazy, she was tiny my leg weighed more then her. Lunch time and gloria the lunch lady made my lunch everyday since I was six, Turkey on a bagel and she used to let me buy snacks- twinkies- ring dings etc. even though I wasn’t supposed to; so you know I loved her. I said gloria for now on turkey on a plate with sliced tomato and a little mayo on the side double the pickles. She also gave me that reaction like my mother and Wendy. Well by may I had lost 20 pounds and everyone was telling me how great I looked that summer I went to camp and the camp called my parents to inform them that I won’t eat donuts on sunday mornings, that I don’t eat candy or pizza and they think I am anorexic. And my mother said she is fine let Dana eat what she wants and trust me she is not anorexic.
By the end of summer I lost 35 pounds, and I knew the necklace was going to fit. We lived in New york but that summer my parents decided we were moving to Florida, not sure if I ever wore the necklace. But we had a 2nd home there in the hotest resort That had a restaurant, snack bar, gourmet shop with candy/ice cream/ cookies and room service. My inner Tubby’s dream. But I didn’t want to move Florida was for vacations, not to live but the choice was not mine. I started school made new friends but it was different and although I played tennis everyday, went swimming all the time I started to eat ice cream, cookies, cheese burgers, club sandwiches that were huge and slowly but surely my gorgeous wardrobe was getting very small. and this gradual gain picked up speed and by 12 I was fatter then I ever was. I was ordering ice cream sundays 3-4 days a week when my parents went out and I would throw the container off the balcony, thinking no body knew. Or I would hang out in the gourmet shop tasting every cake, cookie and candy they had after school, or I would have a cheese burger before dinner. Food was all around me I was in heaven. Until it was time for bar mitvah’s my mother always dressed me in the best so I had all the trendiest clothes but I was so fat that the clothes didn’t fit, i was buying clothes 2 -3x larger then my 100 pound mother. So we started having dresses made which I hated. One day I was putting something on that I had gotten like a month before and it was tight I was 12 nothing to wear and in that phase when your parents say black you say white, my mom said Dana you need to loose weight this is crazy and I said mom feel my legs that is all muscle and without blinking she said “I never saw a sumo wrestler on the cover of vogue”!I can hear those words still, and I remember saying to myself something has to change but I pretended I didn’t care. that was in October. That following January I went shopping with my mom Her Close friend Debbie Ford RIP the self help guru owned this amazing clothing store Mile High it was the legging era and she just got all new stuff and i wanted this very expensive outfit I loved it and it fit so my mom got it. At first she was hesitant but I said we could share it but my mom wore a size 2-4 and I was a wore probably a 10 as I was trying it on one of the girls that worked there who was 5’9 gorgeous long and lean said Dana you should talk to my brother last summer he went to diet camp and he looks great. My mom was part of conversation but didn’t push it so I thought. Jodi called her mom for the info and gave it to my mom. On the way home, I remember like it was yesterday; I said I would go, my mom said think about it and in a month you still want to go I will have daddy get the info and sign you up. Little did I know I was enrolled the next day. Well at the beginning of may I said to my mom we never discussed camp she said i will discuss with daddy tonight, but she called him and when he came home from work he had all the information and I was leaving on the 18th. Well that was when my life changed I lost 37 pounds and I never gained it back. But I learned about creating a life style about moderation and about exercise. When I came home they let me join the spa you had to be 16 but my parents were best friends with owner and I became obsessed with my weight, I studied nutrition in collage and in 2000 I started working for the leading neutraceutical manufacturer and I was the rep for the south east I would educate dr’s harvard grads about vitamins and nutrition they were clueless. I was fascinated by that, how do they not know. I would teach them about how todays health issue are all related to lack of vitamins. I would custom custom formulate medical dosages for condition specific disease for cardiologist, neurologist, chiro practors any type of dr. created dr’s brands I loved it. In 2004 my dad was mis diagnosed and past away My mother still has not recovered we were devastated. I knew something was terribly wrong leading up to his passing, in fact I said to my mom the day prior daddy is going to die, she gave me that look. I said the morning of May14,2004 that one day I have to get the message out so people can get better. we are over medicated, under nourished with a staff of dr’s that don’t talk to each other and only give you 15 minutes a visit. Even with great insurance and if you know them. I was shy at the time to publicly speak so I wasn’t sure how this would happen. I loved my job but at this time I started to have mixed feeling about doctors, In 2005 I developed horrible allergies, I was traveling a lot always in hotels. At first I was diagnosed with dust, mold allergies, made sense My eyes and face would swell that I couldn’t see I was on prednisone all the time. Since i was suppose to represent health, but I wasn’t such a hot booth babe at medical conventions. this went on until 2010, but as time went on I became allergic to chemicals, perfume, house hold cleaning supplies, people LOL. it was out of control, my eye were so swollen every day, I would prey please let me wake up normal. my head hurt, sinuses everything. And my diet was really clean, I researched everywhere and spoke to anyone who would listen. In 2009 I started feeling really stressed with my Job management changed and I did not get a long with my manager who made me miserable, the stress was insane. so my allergies were worse and then one day i thought I was having a heart attack the pain was excruciating in my chest I went to the emergency room and was told iI had gastritis and the doctor there said to me you have allergy eyes,have you tested for egg allergies. I said noI love eggs. But I am allergic to feathers and sure enough I am allergic to poultry so gastristis and major allergies. In 2011 the stress was to much to handle I parted way with my job. I enrolled in IIN and the wellness inventory ICFcause it was time to get my message out. A now I am the nutritionist for arthritis show and educating people on vitamins and condition specific diseases. and I launched origin health and wellness coaches after working one on one for the last year I decided I want to start building a web based business so I can coach coaches, so this is what I am launching now and that is how I cam to your site. Kristin, I have been watching Know The Cause for a few months now. I have allergies to mold, dust, pet dander and maple pollen. My allergies are worse than ever. I have digestive issues, GERD, psoriasis, achy joints, HAD migraines they stopped when i stopped eating poorly, i also have insomnia and can not lose weight.I tried a vegan diet but was dizzy all the time and had trouble digesting all the beans. So now I have been doing the phase 1 diet for about 2 weeks but continue to struggle with cravings so slipped up last week end… Guess what the migraines started again. I just found your web site and I am very excited to try some of your recipes.. Thank you for what you do, Please help with giving me suggestions as to which supplements are the best to start with!! Hi, Kristin: I am almost 64 years old and am in fairly good health. I need to lose 50 pounds, but I also have a husband who has had heart surgery that I need to take care of. Loved reading your story. I also watch Doug Kaufman back in 2008 and was laughed at by my family and friends. I just got out of the habit of wathching it and regret it. I struggle with food and my weight and I had a baby 6 months ago and still carrying 30 extra pounds because I continue to eat unhealthy. Hello Kristin, I was diagnosed with Hyperthyroid a couple of years ago. I have 2 goiters growing within my thyroid. Last week my endo suggested I have my thyroid removed because it is becomming uncomfortable (restrictive. My T3 and T4 numbers are stable. I am on 5 mg of methinmazole.
I was very upset, thinking about living the rest of my life without my thyroid gland really is disturbing.
I started researching alternative ways to repair my thyroid.
I am finding a healthy diet is the only way to reduce the inflamation. I now relize I can never cure the problem, just control it.
It has been 5 days since I cut out all sugar, dairy, caffeine and white flour from my diet.
In just a short 5 days, I feel the inflamation in my goiters have gone down, the discomfort is almost gone.
I am truly a sugar-aholic, I am so happy I found your sight. You have so many reciepes and insperation that I really need right now.
I needed to share my story with you because you have shared your story with me and it really has made an impact on me.

Under “Millet” on the internet it is described as “technically a SEED and not a grain, but classified as a grain — from a culinary perspective.” It is so good, like Quinoa, and would give Phase 1 another option. It cooks just like Quinoa and makes delightful “mashed potatoes”. It is also described as a seed from grass – and of course is in all mixed bird seed – and you know, birds never gain weight!!
Do look it up on the Net and I would love to know your thoughts.

Thanks so very much for sharing your story. It is such an encouragement. I am a mother of 4 and was able to lose the weight after the first two pregnancies, but after the third, I became pregnant before losing all my weight. Since I gain around 60 pounds with each pregnancy, It has been extremely hard to lose! My attemps at exercise only left me exhausted and feeling defeated. THanks for reminding me that God is the one to rely on and not my own will power. I watch Know the Cause and love all of the information I am being blessed with. THanks for the healthy recipies you share. I am thankful to be able to teach my daughters how to use ALL things to the glory of God, which includes what we put into our mouths. My grandmother is a former RN who became involved in natural herbs and nutrition over 20 years ago. When I was a kid I always followed her advice, and it has now continued into my adulthood. I have not personally seen the show yet, but she raves about it, and truly adores you as well. I would love to follow the Phase One diet, but I just am so lazy when it comes to food. If I don’t “feel” hunger, then I just don’t eat… which I know, of course, is not healthy. I am, like I said, lazy when it comes to food, so often my nutritious buys from the health food store go neglected to my neighbor’s processed foods next door. I also have two toddlers who refuse almost every vegetable, and a husband who is the same way. I would love it if you could find recipes with minimal ingredients. I have recently had the family go “paleo” as much as possible, but I know that it lacks in many ways compared to the Phase One. Please help this frazzled mom who is almost afraid to eat anything grown in this country. Your story was inspiration and I want that for myself as well. I asked God to take away the cravings for the sweets, but I guess I’m resisting conviction.

I am fat and healthy (and not happy about it). I exercise regularly (ride my bike 10 miles or walk 3 miles every day), eat 3 healthy meals every day, poop at least 3 times every day (often 5 times) and watch Know the Cause every day. I don’t agree with every thing but gain wisdom from the show. I think I weigh 200 lbs – about 60 lbs over weight right in the middle. I am not depressed, don’t take any prescriptions (don’t rem. ever taking any antibiotics) and am really quite healthy (I have energy) but because I’m fat, I’m always reading health books and always trying to find away to lose weight somehow (there must be a way)
So – what am I doing wrong? I guess I’m just not precise enough and don’t absolutely stick to the phase one diet without fail.

great story! You are beautiful! I can totally relate in the roller coaster life. I feel the same way, and don’t want that for my daughters. I am trying to get us to eat healthier and cut out processed foods, but beyond that it is so confusing about what to eat. And of course trying to get picky eaters happy is so hard! I for sure have a love / hate relationship. I have read so many stories like yours and I pray, but I do still ride my roller coaster. My moods do get bad if I’m feeling fat and then I’m a terrible mom. It’s all so hard. Thank you for sharing. I will continue to pray!

I am so intrigued by your story. I have been involved in healthy eating and raw foods for a decade. I recently came down with a serious fungal lung infection called “valley fever”. Although after 7 months I am better and blood tests show the coccidiomycosis is no longer present in my blood, I still feel horrible. My tongue is white, I have thick sputum in my throat all the time, I am fatigued. I used to watch “Know The Cause” way back in 2004-2005 but then later we could not get that particular TV channel. I now see you can watch it on the internet. I tuned in again today and then did a search on you-tube for phase I diet info and your videos came up. I am positive my lingering symptoms are caused by fungus and candida in my blood caused initially by the valley fever. Thank you for having all those You tube videos available with your recipe ideas. I ordered the new cook book by Doug Kaufman and hope to get a better idea of phase I diet. I however, do not eat meat or dairy. Can you do phase I if you basically already eat a plant based diet with a little fish now and then, but do not eat any other animal flesh? Thank you for any suggestions!

Yes, absolutely you can do Phase 1 as a vegetarian or vegan! It is just extra important to be educated on all the foods available, so you can insure you are getting the proper nutrition. I do nutrition consultations to help with these concerns if you are interested. Hugs, Kristin

My favorite way to take B vitamins is sublingually (under the tongue). Right now I love the brand Superior Source. I’d suggest you always go with methylcobalamin in the highest dose available over cyanocobalamin, (the “cyano” is short for “cyanide”; stay away from that if you can!). Methyl will do everything regular B12 does, PLUS it’ll cross the blood-brain barrier. Just my opinion, hope it helps! Thanks Maria!!

Thank you for your transparency in sharing your life’s journey. I, too, have faced numerous health challenges (some life-threatening), and that is what led me to become a holistic health coach; I’ve been been divinely guided from day one. The school I felt I had to attend is The Institute For Integrative Nutrition. It is in New York and used to offer monthly, weekend intensives. I’m in California and was teaching high school at the time and couldn’t make my schedule work. I enrolled in another online school in the meantime and became a nutritional consultant.

I am sooooo glad I found you Kristin! I have had issues with my weight my entire life and I mean entire. I used to be a dancer even with the extra weight but the physical activity always kept my weight in check. When I hit highschool dance stopped but my poor eating habits remained and the weight just started building. Last August I woke up one day and realized that I was living with no purpose. I woke up every day ate, sat down and worked, and ate, and so on and so forth. I wanted dance back in my life and I was so out of shape and heavy I was even afraid to simply skip. I feared at the age of 22 I would blow my knee out. This beyond freaked me out and I knew I needed a change. I began exercising and eating right and now I am 32 pounds lighter. I can also leap through the air and be strong when I dance again. I still have a long way to go and I sometimes get discouraged because of this fact. But now that I found you and your story I am more inspired than ever to continue with my weightloss. I have learned so much from Doug Kaufman and the other people he has on the show. Watching KTC has led me to Dr. Joel Wallach and Dr. Peter Glidden, I too feel God has led me on this journey to good health for me and my family. I will be purchasing Doug & Denni’s Cooking Your Way to Good Health, but I would also like to get one of his other books as well. I can’t decide which one. Could you possibly suggest something, or two. My hubby and I, both in our 50s, need to lose weight, but do not have diabetes, or any other serious diseases. I am a fervent health researcher, and reader so books by any other authors would be welcomed as well. Thank you for mentioning Love to Eat Hate to Eat in your “story.” I went and got it and found it very helpful.

Hi Kristin does the phase one diet help eliminate fugus or is it some type of supplement I need to take? Also, do I detox first before I start phase one? cause as you see in the photo I’m puffy…lol
Evelyn, you’re so funny… you look beautiful, not puffy at all! Yes, the Phase 1 diet does help to eliminate fungus, but many people find even more success coupling the diet with a few supplements like a probiotic and a rotation of anti fungal supplements like olive leaf extract, caprylic acid, oil of oregano, etc, etc… Do some research and see what’s right for you, but those are some of my favorites!
Phase 1 is like a gentle detox in itself, so it’s up to you. I love to do a deeper detox once or twice a year! Hugs, Kristin

when you say no potatoes does that mean sweet potatoes or yams?
Yes, if you are following Phase 1 it’s important to eliminate all potatoes. Adding sweet potatoes or yams back into the diet on occasion after your health improves is absolutely fine!
I am so ready to go all the way now. I am glad I found your blog. I have been on a very long journey and I finally found the answer. I have been watching “Know the Cause” for a couple of years now. Making small changes but I find you can’t just do the small changes. You have to go “all the way” and I am “finally” ready to do it. Hate to tell you that it took me 70 years to finally say that!! My birthday is tomorrow and I want to make that my starting point.My son gave me cash for my birthday so I am sending for the new cook book. I ordered “the fungus link to weight loss” a couple of years ago. Guess I have been counting the cost long enough now. Looking forward tot he journey.

Kristin, I just browsed through.Hadn’t been on here in awhile. I never dreamed when I put my last post in on Febr 2012 that I would lose my husband to a massive heart attack and have so much to deal with.Just looking back to all of it. Through it all I have continued on my health journey and lost 55# from my starting weight. I still have 25# to go to be at my perfect healthy weight but I know I will make it. I have the tools. I work out 3x weekly and I walk 5 days a week and eat healthy. Thank you Kristin for all you do. God bless.

I have a question. If I read the story correctly, you actually lost all your weight by fasting and not actually the Phase 1 diet. The diet came in after the fact to help with your health, yes?
So the main question I have, is do I need to count calories on this as well to lose weight or just eat based on the diet and the weight will come off?
Oh, no I did not lose all the weight by fasting. Yes, I did lose some weight, but most of it came right back on. I did lose about half the weight through eating healthy and exercising at least an hour a day, but it was very hard to keep off and my cravings were relentless… a constant battle.
Once I found Doug Kaufmann and learned about the fungus link to weight issues and cravings I started down that path. It wasn’t a magic quick fix, I will never exaggerate my experiences because I know first hand how heartbreaking it is to be given false hope that things either work or can happen overnight. When dealing with the root cause of an issue it takes time. And not only that, but I had to deal with my emotional food eating and spiritual obedience.
So needless to say it was a process, but it did work and I was able to lose the rest of the weight and keep it off, as well as clear up my health issues. I have been completely freed from worrying about food, my weight and ravenous cravings.
God had me go through these trials for a purpose that I now understand and am thankful for, but today if I was in my same situation and found this truth, Phase 1 would be my plan of attack…. along with exercise, a few supplements and of course prayer.
I don’t like counting calories. It’s important to listen to when you are truly hungry and full and watch portions. Phase 1 is so nourishing and a little goes a long way.

I added your website to my startup a couple of weeks ago after watching you on Know the Cause. It wasn’t until today that I read your testimony. I have lots in common, been strugling for years. In fact, I been watching Doug on tv since 1998 and even bought his first book. I also have his cookbook “Eating your way to good health”. It’s easy to watch and get pumped up to do it but in reality how do you make yourself do it???? I’m 62 do you think I’ll ever learn?

My sister sent me a link to your website wanting me to read your story. It is crazy to know that someone experienced the same issues that I currently struggle with right here in NW Arkansas. Ever since I was 18 I have had very odd health issues. I was always so happy and energetic when I was young, but then started getting tired easily, irritable, among other things. I cannot wait to finally feel better. If you have any other recommendations, please please let me know! I am very anxious to feel like my old self again.
Loved your life story. I have never been over weight – just the opposite. I am a busy mom and my sleep has been very interrupted for 6 years. I started neglecting my own nutrition while caring for my family. I unintentionally started living off coffee to keep me going. I ended up with sinus, ear, throat and bronchial infections over the course of 8 months. I am generally a very healthy person, but this woke me up quickly. I was tired of being tired and sick and never having enough to give to my family. I recently found a book called “Clean” by Dr. Junger. I did this cleanse (very similar to Doug Kaufmann’s) and feel like a new woman. After his cleanse I discovered Doug Kaufmann’s book and continued on (am doing it now) with the fungal diet phase 1. I am eating lots of vegetables and watched a video of you today sharing with Doug about quinoa, amaranth and buckwheat. I was SO excited because I (now) love these seeds and was happy that I can still eat them. I also have discovered Chia seeds too. I have a new zest for life, I feel like I am living “awake” instead of in a fog. I think this is the way God intended us to live. I now can pray and read my Bible and think in the morning instead of sleeping until the last possible minute. So thankful for God directing me to this information. So, thank you!
